My name is Veronica Noechel of Raleigh, NC.

Vegan since 1996, Veg since 1992.

When did you open your shop on Etsy? 
March 2008

What do you sell on Etsy? 
Pet themed stationery items...cards, business card boxes, dog and cat jewelry, and my books...some supplies for scrapbooking and crafting, which I'm planning to expand upon soon.

When you are not working on your shop, what do you do? 
Write, foster rescue animals (rats, mice, hamsters, etc. Currently gerbils. :), play with my animals, read a lot.

Where do you get your inspiration? 
My animals and the animals I've worked with in rescue and dog training. I love spending time with animals. They've always got something surprising to "say". I do some animal communications, for those who believe in that sort of thing. My friends have me read their animals when they're confused about a behavior or if they're having issues. Whether it's some subtle body language I'm reading (though I don't always do them in person, I like to have a photo.) or it's actually something more etherial, I don't know, I just get asked to do it a lot. :)

Favorite veggie meal? 
My husband, Scott's vegan pot pie. Yum!

My Favorite Macaroni and Cheese

There are lots of reasons why I will never be stick thin: Cookies. Cheese pizza. Vegetable korma and naan.

And, macaroni and cheese. I don’t have many things I’d consider my “specialty,” but this recipe is the one I get asked about the most and get the most compliments on. It’s also the dish I bring with me most often to church dinners, MOMS Club events, and friends’ houses.

Oh, and I really love macaroni and cheese. I have a whole cookbook of mac-and-cheese recipes; that’s where this one is from.


Today’s Macaroni and Cheese

2c milk
4T butter
1/4c flour
2c salsa (I sometimes leave this out – it’s good either way)
3c shredded cheddar
1 1/2t salt
1 pound dried pasta

Cook pasta according to directions, drain.

Warm milk in a small saucepan over medium heat or in a glass measuring cup in the microwave for about 1 minute. In a medium saucepan, melt the butter over medium heat, then stir in the flour and whisk until the mixture turns a deep golden, about 2 minutes.

Add the warmed mix all at once and continue to whisk until the mixture thickens and comes to a full boil, about 4-5 minutes.

Stir in the salsa, if using, and remove from heat. Stir in the cheese, stirring until it melts. Taste and season generously with salt. Mix cheese sauce with pasta and spoon into a serving dish.

For a crunchy top: Spoon the macaroni and cheese into a buttered dish. Top with 1/2c bread crumbs mixed with 1T melted butter. Bake in a preheated 375-degree oven for 10-12 minutes.

Earth Day - Veg*n Time

So, to me, talking about going vegetarian or vegan seems like the PERFECT thing to talk about on Earth Day! I personally would say that giving up meat and dairy is the single most effective way to help the environment (but I know that there are many other ways to help our little earth). SO, let's get on with it shall we?

Here are some reasons that you should consider going veggie:

1. Livestock farming is responsible for almost 20% (yes 20%) of all greenhouse gas emissions. If you quit eating meat, you will be helping reduce those greenhouse gas emissions, thus putting less strain on our earth.

2. Nitrous oxide is found in the largest quantities from cow manure - 65%. Just so you know, nitrous oxide is almost 300 times as damaging to the environment as carbon dioxide. Now, if you stop eating meat, cows will not stop pooping. BUT, if you stop eating meat, you will reduce the need for SO MANY cows to be crammed into so many tight, awful areas!

3. Over 1 Billion people do not have access to clean water and more than half to not have access to proper sanitation. That's a big deal, because 70% of all freshwater drawn from aquifers, lakes and waterways is used for farming. If you quit eating meat, you could be allowing some of that water to be used for humans who desperately need it.

4. Livestock production accounts for over 8% of human water consumption.

5. 30% of the earths entire surface is used for raising farm animals. That's a big deal, because it means that human are giving up living space and it means that valuable forest land is being cut down to make more space for farming. Give up meat, and you could prevent more trees from being chopped down.

6. Cattle require 7 kg of grain to produce 1 kg of beef while pigs require 4 kg of grain to produce 1 kg of pork. That's a lot of grain when you think about how many cattle and pigs are raised each year for food. That grain will go a lot further in feeding hungry people than that meat will.

Ok, short little list. Those are some pretty good reasons though! Now, in case reading through this list isn't enough for you, or you just want to do more research, I'm going to list a couple websites that I think you all need to go check out!

Earth Day Spotlight Seller

Happy Earth Day everyone and welcome back to the Spotlight Seller! This week we are proud to feature an eco-friendly seller, Tiffany of Picnic Basket Crafts!!



Tell us a bit about yourself?
My name is Tiffany, and I live in Littleton, Colorado.  I have two kiddos, both boys, a husband, and a Norwegian Elkhound.  We like to hike and ski and ride our bikes all over town.

Vegan or Vegetarian? How long?
My 10 year old son and I have been vegetarians for a bit over a year, and are becoming vegan (very imperfectly).  Finding meals everyone in the family will eat and enjoy is a real challenge, as the other two will live without meat, but not cheese and milk.  We are working on them!  (-:

When did you open your shop on Etsy?
My etsy shop has been open since 2008.  Before that, my business was run out of a picnic basket I carried with me everywhere I went.

I sell a wide range of products for "down to earth decadence" - making it easy to take care of your body, home, and baby while keeping it light on your pocketbook as well as the environment. Soaps, lotions, balms, cleaning products, baby and mama products, unpaper products, etc.
When you are not working on your shop, what do you do?
I am a full time middle school science teacher.  I also love to hang out with my kids.

Where do you get your inspiration?
They say necessity is the mother of invention.  When I want or need something, my first impulse is to try to make it myself.  When I love what I've made, I like to share it with others.  When I don't, well...  I try to find it on etsy and support another artisan!

Favorite veggie meal?
Grilled portobella burgers and chipotle sweet potato fries!

Earth Day Issues: Endandered Species

It doesn't seem like they would be that important, but they really are! Endangered species are something that everyone should be aware of and work to save. Over the course of our earths lifetime many species of animals have gone extinct of become endangered. Let me tell you why this is a big deal.

Let's say that a predatory animal like the polar bear becomes extinct. That means the animals that a polar bear eats will breed like crazy and there will be fewer means of controlling their population. It means that there will be no polar bears for other larger animals to, let's say, snack on.

Now, let's say that a small animal like salmon goes extinct. Black and brown bears who rely on fish eating as a large part of their diet just lost a major food supply. That means there would be potential for these and other animals who feast on fish to become endangered or extinct. If other animals become extinct, then the animals who fed on them could become extinct as well. It's a never ending cycle and it throws mother earth off.

Two huge issues that are affecting species are:

*climate change
*loss of habitat

Climate change is causing warmer weather, which is causing more ice to melt. Warmer weather can kill coral reef, which many species of animals rely on for food and shelter. As for loss of habitat, when an animal such as a wolf, fox or bear loses their natural habitat, they must either adapt or die out. This causes more and more species that rely on them to die out as well.

SO, In honor of Earth day tomorrow, I encourage everyone to think about what they can do to help preserve habitats or lessen their impact on the earth to help save more of our earths inhabitants

Earth Day - Recycling

Hello there! As you know (or I hope you know ;) Earth day is coming up on Sunday. Over the next few days EtsyVeg Members are going to be posting important earth things on here on our team blog and on our own personal blogs as well. We hope you'll take the time to read and share these posts. We hope to raise awareness that the earth and its inhabitants need to be treated with respect EVERY day! Today I'm going to "talk" a bit about the importance of recycling. I'm a bit of a recycling nerd. I think it is very important. My personal reasons for recycling are: 1. Recycling prevents items from sitting in a landfill. 2. Recycling prevents items from floating into rivers, lakes or oceans and upsetting the wildlife or plantlife that resides there. 3. Recycling gives us a chance to reuse items. Those are a few reasons that I think are pretty good. But in case you need some more incentive, here you go: 1. Recycling prevents pollution caused by the manufacturing of products from virgin materials. 2. Recycling saves energy. 3. Recycling decreases emissions of greenhouse gases that contribute to global climate change. 4. Recycling conserves natural resources such as timber, water, and minerals. 5. Recycling helps sustain the environment for future generations. Ok, go! I hope that gives you plenty of reasons to get out there and recycle whatever you can!

Spotlight Seller

Hello all!! It is time for the weekly Spotlight Seller! This fine Sunday we are featuring the talents of Stasya and her awesome The Stitch and Fold!!


Tell us a bit about yourself ? 
I' m Stasya, currently studying Experimental Psychology at the University of Oxford, England U.K..

Vegan or Vegetarian? How long?
I've been officially Vegetarian for the past 5 years. I use some soy products preferentially to dairy products (no butter in my house, and I like soy milk and soy yoghurt) - so perhaps I'm primarily an ovo-vegetarian. Lifestyle-wise, I avoid the use of products which result in the death of an animal, e.g. leather and silk.

When did you open your shop on Etsy?
I first opened shop as glycosidic in November 2010. In July 2011, I decided that glycosidic was a bit of an arbitrary name for a shop selling origami and crochet, so moved over to my current location at thestitchandfold.etsy.com/ . This was a few months before Etsy allowed name changes - sigh.

What do you sell on Etsy?
I enjoy making origami flowers, miniatures, greeting cards embellished with origami as well as amigurumi (crocheted stuffed animals) and other cute crochet items. I am looking to branch off into doing a bit of simple embroidery too, in the near future.

When you are not working on your shop, what do you do?
I enjoy gardening (especially gowing flowers and veg) as well as snail mailing.

Where do you get your inspiration?
I am very much inspired by nature (hence the profusion of flowers and animals in my shop) as well as by cuteness :-)

Favorite veggie meal?
I'm quite easy - but off the top of my mind, pizza, pasta and Asian noodles are my favourites! I also love broccoli!

Tomato Curry


Have I mentioned yet how much I love Indian food and curries? I made this Moosewood Tomato Curry recipe last summer when we had a ton of tomatoes from our summer farm share. Served with rice and naan, it was divine!


Before you start, peel the tomatoes. The easiest way is to drop them in boiling water for a few seconds (10-30) and then put them into cold or ice water. The peel should come off easily once the tomatoes are cool enough to handle.

Tomato Curry

1 T butter or oil
1 1/2 c chopped onions
1 tsp. salt
1 small bell pepper, minced
6 medium-sized ripe tomatoes, peeled and seeded and coarsely chopped
2 c tomato purée
1/2 t cinnamon
2 t cumin

Optional:
1/2 t ground fenugreek
1/2 t dried coriander
1/4 t cayenne (or more, to taste)

Optional:
3 hardboiled eggs, peeled and cut into wedges
1/2 pound firm tofu, cut into small cubes
Fresh cilantro, minced

(From the options, I added the cayenne and tofu. I sautéed the tofu so it was crispy on the outside.)

Melt butter (or heat oil) in a Dutch oven. Add onion, salt, and mustard seeds.
Sauté over medium heat for 8-10 minutes, or until the onions soften and the seeds begin to pop.

Add ginger, garlic, and minced bell pepper, and cook another 5 minutes, or until the pepper begins to be tender.

Add remaining ingredients, mix well, and heat just to boiling, stirring frequently. Turn the heat down to a simmer, cover, and cook for 15-20 minutes.

Serve hot, over rice, with wedges of egg or cubes of tofu arranged on top, and a final sprinkling of minced cilantro.

Serves 4-5

Spotlight Seller

Happy Easter everyone and welcome back to the Spotlight Seller!! This week features another new member  to our awesome team, Carmen of Pipsqueek Gourmet!!


Tell us a bit about yourself ? 
I'm Carmen, a new member of the EtsyVeg team. For over 30 years I have practiced yoga, meditation and vegetarianism. I've traveled and lived in different countries for extended periods of time and presently maintain residency both in the United States and in Italy. During my stay in different countries, I have owned and operated small food business in Asia and the United States; owned and ran a company in the Philippines which manufactured and exported high end handmade paper products; and owned a self sufficient organic farm in Italy. It has been a rewarding life journey from which I have learned many different skills which I now bring to my Etsy shops. 

Vegan or Vegetarian? How long? 
I have been a vegetarian for over 30 years...actually almost vegan. I just can't give up cheese especially when I'm in iTaly!

When did you open your shop on Etsy? 
Pipsqueek Gourmet was opened on February 1, 2012
and Pipsqueek Creations was opened on January 15, 2012.

What do you sell on Etsy? 
I sell homemade, vegetarian/vegan Italian sauces and other specialty food products at Pipsqueek Gourmet.
I also love crafting with paper, so you'll find my upcycled paper baskets and paper jewelry at Pipsqueek Creations. 

When you are not working on your shop, what do you do? 
I enjoy working on my vegetable garden and practicing my classical guitar. Once or twice a week, I also volunteer at our local hospital.

Where do you get your inspiration? 
My inspiration for my products come from my travel experiences and over 30 years of personal exploration. 

Favorite veggie meal? 
I enjoy cooking and always prefer a healthy, home cooked meal. But once in a while I do enjoy eating at a good Indian or middle eastern restaurant. I love curried vegetables, dhal, biryani, couscous and other spicy dishes. But I also enjoy a simple Filipino plate of brown rice with mung beans or veggies cooked in coconut milk. And of course, I love Italian food!

Flourless Truffle Cookies


Last week, I wanted to make cookies to bring to our weekly playdate, but I was out of some of the things I need for my favorite chocolate chip cookie recipe (a crime!). I turned to these quick yummies instead. You only need about five minutes to mix this cookie recipe. Then you can sit back and let the oven do the rest. Dress them up with different-colored chips or M&Ms for a festive spring treat!


Flourless Truffle Cookies
1c peanut butter
1c packed brown sugar
1 egg
1t baking soda
1/2c chocolate chips

Preheat oven to 350 degrees.

Combine all ingredients except chocolate chips until well blended. Add chocolate chips.

Drop by slightly rounded teaspoonfuls onto ungreased nonstick baking sheet. Bake for 9 minutes. Allow to cool on sheet for 5 minutes before transferring to a cooling rack.

Yield: Original recipe says 4 ½ dozen, but I’m pretty generous with my “slightly rounded teaspoonfuls,” so I usually get around 3 dozen.

Spotlight Seller


This week's Spotlight Seller is...me, your weekly host of the Spotlight Seller Kate of Bunny's Baked Goods!! (No April Fools)



Tell us a bit about yourself?
My name is Kate (my best friend calls me Bunny) and I live in Seattle with my boyfriend Jimmy and three cats; Kala, Handsome, and Sir Reginald Bagsworth Drummond! I grew up in Texas and moved to the Emerald City with my Mom when I was still a teenager. Although it is home now I will always have Austin in my heart!!

Vegan or Vegetarian? How long?
I have been vegan for the last 3 years and vegetarian for about 15 years before that. 

When did you open your shop on Etsy?
I opened my little shop June 3, 2011!

Tell us about what you sell on Etsy?
I sell tiered cupcake stands and tidbit trays made from vintage plates. I would love to add some of my vegan baked goods, but I'm nervous about shipping them!! 

When you are not working on your shop, what do you do?
I bake (a lot), both for myself and for money!! When I have time I love to work in the veggie garden, sew, and do other crafty things! I also do this weekly blog post on our awesome team blog. (If I am putting myself in here that means no one else wanted to. :( )

Where do you get your inspiration?
So many things!! I love the style of the 1950's, Japanese Kawaii, French glamour, nature...life!

What's your favorite veggie meal?
It sounds weird but I could eat steamed rice with liquid aminos and vegan cole slaw all the time! I also love making "Mac and Cheese" and pizza. Standard junk food! Seattle has so many awesome vegan restaurants too! It's hard to pick...the "Mongolian Beef" from Moonlight or the Garlic Mania Noodles from In The Bowl. Oh and of course baked goods!

Where else can we find you?

I have been reluctant to join any social media outlets (I'm shy), but fear that soon I'll have to break down and join. So, for now just Etsy. 

Although...if you are in Seattle you can find my vegan pies at The 5 Point Cafe!!! All vegan pies, 24 hours a day!!
