Spaghetti Pie

I love this spaghetti pie recipe, and when my son told me he wanted “spaghetti pizza,” it was the first thing I thought of. I mean, the spaghetti is kind of like a crust in this ... right?

 It’s super easy and fast and uses ingredients you likely already have. Pair it with a tossed salad, some crusty bread, and perhaps a glass of wine, and you have dinner done in no time. Plus, it reheats really well for lunches and leftovers. The recipe comes from my mom. My son loves it, even though he still wants spaghetti pizza.

Spaghetti Pie

1 lb spaghetti
2T butter
1 egg
1/3c grated parmesan cheese
½ jar of your favorite spaghetti sauce
8 oz. cottage cheese

Shredded mozzarella cheese Cook spaghetti according to package directions. Drain and mix with the butter, egg and parmesan cheese. Place pasta in a greased pie pan. Spread the cottage cheese on top and then the sauce.

I like to cover as much as the top of the pasta as possible with sauce; otherwise, the pasta gets too crunchy. Bake 20 minutes at 350 degrees.

Top with shredded cheese (I use at least a cup; I like it cheesy), and bake five minutes more.

Tell us a bit about yourself? 
My name is Britt, and I'm from the Lehigh Valley area of Pennsylvania. I'm a crafter of various sorts, but my main focus is jewelry.

Vegan or Vegetarian? How long? 
I have been vegetarian for over 7 years, and I have been vegan on and off during that time and am currently vegan.

When did you open your shop on Etsy? 
I opened up my shop in October 2010, but I only really dove in and started really focusing on it around August 2011.

I sell handmade jewelry, which currently includes necklaces, bracelets, and earrings featuring charms and gemstones.

When you are not working on your shop, what do you do? 
I enjoy spending time with my 2 dogs, my cat, and my family and friends. I enjoy exploring all of the wonderful local shops, going to see live music, and trying out veg*n friendly eateries.

Where do you get your inspiration? 
I get my inspiration from my personal interests and those of my loved ones, as well as nature and the world around me.

What's your favorite veggie meal? 
I've been eating plenty of veggie-filled tofu scramble with hash browns lately!

Skillet Shepherd’s Pie

We celebrated St. Patrick’s Day a day late this year, and I wanted something quick but appropriate for our holiday dinner. This skillet shepherd’s pie, which I found through Pinterest, looked to be perfect – with a few necessary modifications, of course.

I think I’ve found my new go-to shepherd’s pie recipe! (Even better, my four year old loved it!) I might even try this one camping this summer using instant mashed potatoes.

Skillet Shepherd’s Pie
(modified from

Four servings of mashed potatoes, either homemade or instant
1 package vegetarian grounds*
10 oz. frozen mixed vegetables
1 recipe brown gravy (see below)
Parmesan cheese
Salt and pepper to taste

* We like Morningstar Farms brand grounds, which come in a 12 oz. package, but any type would work. I’d also like to try this recipe with TVP, ground seitan, or even crumbled tofu.

Preheat your oven to broil.

Prepare mashed potatoes as desired – homemade or instant. (My husband makes great mashed potatoes, so I put him in charge of this part.)

Brown the grounds in a broiler-safe skillet (I used cast iron). When they’re completely thaw, add the vegetables and cook for several minutes, until the veggies are warm. Mix in the gravy and simmer for 5-10 minutes until everything is good and warm.

Place a ring of mashed potatoes around the outside of the skillet, leaving an opening in the center. Sprinkle parmesan cheese over the potatoes. Place in broiler for about 5 minutes until the cheese browns.

Brown Gravy
(modified from The Nutritional Yeast Cookbook)

2T cornstarch
3T soy sauce
1 1/3c water or vegetable broth
Pinch each dried sage, thyme, rosemary and oregano 1T nutritional yeast

Stir the cornstarch and soy sauce in a sauce pan to make a smooth, thin paste. Whisk in the broth and herbs and cook over medium-high heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and whisk in the nutritional yeast.

The original recipe also calls for 2T tahini to be added with the nutritional yeast, but I find the flavor too strong in this recipe, so I usually leave it out. We love this gravy over mashed potatoes and Quorn, too.

Spotlight Seller

This week on the Spotlight Seller we are featuring Vanessa of Desiderio Chocolates!

Tell us a bit about yourself? 
Vanessa Metalli Dionne, originally from Rome, Italy now Longmont, Colorado, creating recipes, working with chocolate and local ingredients, kind made it a point to find local spirits to incorporate in my confections

Vegan or Vegetarian? 

Vegan three years, I turned vegetarian in my early teens and I worked with the wild life rescue center back in Rome Italy, actually that is what I really wanted to do, not sure why I haven't pursue it after.

When did you open your shop on Etsy? 

November 2010 after my sister (Piktoland) suggested it to me, I am glad I did :-)


Tell us about what you sell on Etsy? 

I make vegan confections. After going vegan my first objective for my business was to turn all my recipes into vegan ones. I have created few unique things and recreate others. It's a fusion of my Italian background and American modern world. I love it.

When you are not working on your shop, what do you do? 
I work full time still, I haven't been able to quit yet. It has been hard to keep a running business where I am the only one doing everything, gaining new accounts, working full time, raising my two boys (3 and 7) and in general taking care of a family. I have dedicate all my extra time, which is very little, to my business, and I know I need to start taking care of myself again :-) 

Where do you get your inspiration? 
I always loved making sweets, baking etc. Ideas just flow into my brain on a daily basis and sometimes I have to force my self to just stop. Aromas, spices, colors, foods and desserts, feelings, walking in a spice shop or even just my green grocer. It doesn't take much.

What's your favorite veggie meal? 

It depends the mood I am in, lately a huge plate of garlic sauteed kale or Collard greens with a Daiya grilled cheese sandwich, I just love that stuff, but I eat it sporadically, you know :-P I love Amy's organic Samosa wrap.

My name is Scotti, I live in Ohio, and I love making jewelry and spending time with my friends and family.

Vegan or Vegetarian? How long? 
Vegetarian for a little over 3 years.

When did you open your shop on Etsy? 
Just a couple weeks ago actually! I had a storenvy before that, much more pleased with etsy.

Spotlight Seller

This week on the Spotlight Seller the lovely and talented Kristy of And Live! You might recognize Kristy's soap, but let's see what else she has been up to!

Tell us a bit about yourself? 
I'm Kristy, a stay at home mom from New Jersey.  I hope to one day have a small self sustaining homestead with a house that we've built with our own hands.  Until then, we reuse, recycle and upcycle as often as we can in our suburban community. 

Vegan or Vegetarian? How long?
I was vegan for 16 years until I had my daughter.  I'm now vegetarian (still mostly vegan) while breastfeeding.

When did you open your shop on Etsy?
I opened up shop November 5th of 2010 as Sinister Soaps.  I've since changed my name to And Live and expanded on what I offer.

Tell us about what you sell on Etsy?
I sell a variety or things now!   From handmade soaps to felt accessories for body and home.  I have been leaning more toward crafting with eco-friendly recycled felt lately since it's something I can do any time of the day with the kids around.  I make felt flower hair accessories as well as rings and jewelry and have begun working on some home decor.  I'm excited about the transition.

When you are not working on your shop, what do you do?
When I'm not working on items for the shop, I'm being a mom.  Doing laundry, changing diapers, making meals, food shopping and couponing.  I've recently started  maximizing our savings to make our income go further.  It's a great reward to spend less on healthy foods for my family.

Where do you get your inspiration?
I draw my inspiration for soaps from many things.  It started out with the seven deadly sins, but went on to songs, drinks, foods.  For my crafting, nature is a huge inspiration.  Most of my felt items are flowers, so that's obvious, but my daughter is part of the inspiration as well.  I imagine what would look cute on her and start at it.  

What's your favorite veggie meal?
I love country fried seitan with mashed potatoes, roasted brussel sprouts and green beans.  Or any vegetable, really.  That's just what's most popular with everyone.

Easy Scones with Nearly Clotted Cream

Weekday breakfasts at our house are sometimes rushed affairs as my son and I head out to playdates and errands or start our day playing Legos and cars. On weekends, though, I like to spend a little more time on breakfast. These easy scones are one of my favorite recipes, and they're divine paired with jam and the nearly clotted cream!

Scones and Nearly Clotted Cream


Mix together
2c flour
3t baking powder
1/2t salt
2T sugar

Cut in
1/4c softened butter

Mix in
3/4c milk (soy milk OK)
1 beaten egg

Roll to a 1-inch thick circle. Transfer to baking sheet and cut into 6-8 wedges but don’t separate. (I've cut them into as many as 16 pieces when I need more to share.) Bake 25 minutes at 400 degrees.

Nearly Clotted Cream

1c sour cream
1t brown sugar
1t vanilla

Serve over warm scones with jam. Delicious!
