GivingThanks Roasted Veggie Recipe!

We can't have an entirely vegetarian Thanksgiving at our house, but we do come close. The carnivores revolt so we have ham or roast beef typically because Turkey isn't popular.  Not exactly traditional, but really it's about GivingTHANKS more than food anyway so why not?!

I'll be making this fabulous winter vegetable roast.  VegNews Publisher Joseph Connelly provided the recipe on their website:


Joe’s Roasted Winter Vegetables
Serves 6
What You Need:
2 large carrots
2 sweet potatoes
2 yams
2 parsnips
1 medium red onion, quartered
1 acorn squash
1/2 large butternut squash
12 Brussels sprouts
4 cloves garlic
2 tablespoons olive oil
Fresh rosemary, to taste
Salt, to taste
Freshly ground black pepper, to taste
What You Do:
  1. Preheat oven to 350 degrees. Rinse all vegetables and cut into 1/3-inch pieces** (the Brussels sprouts can be left whole). In large mixing bowl, add vegetables, garlic, oil, rosemary, salt, and pepper.
  2. Place vegetables in large, flat roasting pan and bake 45 to 60 minutes, stirring every 20 minutes, until tender. Serve immediately.

Slurp Away the Sniffles?

I don't know about you, but my kids have started bringing home every virus and it's brother already this season.   I am happy to report that Super Immunity Soup has helped me stay up off the couch and away from the tissue box!  TRY IT -   I found if I doubled the garlic and lemon I enjoyed the taste more, but see what you think.

SUPPER IMMUNITY SOUP!
 
This soup is like a savory smoothie. It's fast, vegan and mostly raw. If you cook cruciferous veggies (like kale) and allium veggies (like onions), the nutrients are destroyed. But if you puree them together first, they chemically bind together making a superfood, as well as keeping all nutrients in tact even when heat is applied. It's delicious and cures a cold in no time!

What You Need

2 cups kale
1 cup vegetable stock (homemade is best)
1/8 of a cup of any variety of onion (I like green onions)
1 clove of garlic
1/2 of an avocado
1 tablespoon of miso paste
3 tablespoons of extra virgin olive oil
Juice of 1 lemon
Sea salt and pepper to taste

How to Make It

Blend all ingredients together in a food processor or blender for until smooth and bright green. Heat through on the stove top - only  few minutes. Or you can allow your Vitamix to heat the soup as it blends to retain live cultures in miso. Serve immediately. Variation: Add dandelion greens instead of kale when cleansing in the spring. Add half of a small cucumber and serve cold as a gazpacho in the summer.

Chocolate Chip Cookie Pie

I tried for years (honestly) to make the perfect chocolate chip cookie. I tried lots of different recipes, and they always came out too crispy and flat. I could never get the consistency of the butter or margarine right; it was either way too soft or too hard.

Then, I found this one on the back of a package of margarine, and Voila! Perfect chocolate chip cookies. The secret? The margarine/butter is melted. Now, I get compliments on my chocolate chip cookies every time I make and share them.

For a variation on my cookies, I tried a cookie pie the last time I baked them after seeing this idea on Pinterest. It’s ridiculously easy: Just make your favorite cookie recipe, press the batter into a pie plate, and bake.


Just thinking about these cookies makes me want to bake.

Cookie Pie

2 1/2c flour
1t baking soda
3/4c butter or margarine, melted and cooled
1 1/2c brown sugar
1 egg
2t vanilla
1c semi-sweet chocolate chips (I often use white and chocolate chips)

Preheat oven to 350 degrees. Grease a pie pan.

Combine flour and baking soda and set aside.

In a large bowl, cream the margarine and brown sugar. Mix well. Stir in egg and vanilla until well blended. Add the flour ingredients and stir until just combined. Fold in the chocolate chips.

Press into the prepared pan and bake 25-30 minutes or until a knife or toothpick inserted in the center comes out clean. Slice into wedges and enjoy!

To make cookies: Drop by heaping tablespoons onto cookie sheets and bake 9-11 minutes.

Quotable Quote o' the Day + Recipe

I had one of those 'I can't believe I said that!' moments this morning as my children squabbled over who was going to eat more waffles.  My six-year-old often tries to keep up with her ten-year-old brother's appetite, prompting my outburst,

"Eating is NOT a competitive sport!"

After I blurted it out I was struck how poignant that sentiment actually is.  Over-eaters are in competition with their better judgement.  Anorexics are in competition with their scale.  Of course there are the infamous, revolting how-many-hotdogs-can-you-eat type of competitions.

And then... often there are the vegan/vegetarians whom self-righteously compete against the the rest of the world to eat with perfect compassion.   Let's advance our passionate cause with just the compassion part - for humans first :-)

 On a lighter note - a great, QUICK AND EASY, no cook, summer recipe!!  I've been eating it for breakfast for an energizing, alkalizing happy jolt. Of course for other meals the addition of tortilla chips + vegan sour cream & cilantro is spectacular.





GAZPACHO

3 lg. Tomatoes
1 Cucumber
1 Green Pepper
1 clove Garlic, chopped
12 C. Tomato Juice
½ C. White Wine Vinegar
¼ C. Lemon Juice
1 T. Mustard
Tabasco to taste

Garnish: Cilantro and/or vegan sour cream

Wash, peel and chop tomatoes & cucumber.  Wash, seed and chop the pepper and place
all in a salad bowl.  Add the rest of the ingredients, mix well and serve cold w/ the chopped
cilantro on top.  

Donut Muffins

When I was a kid, my grandmother made the best homemade donuts. Crispy on the outside and warm and soft on the inside. They were amazing, and I loved them.

I don’t own a deep fryer and I do try to watch how much fried food I eat, so I haven’t attempted homemade donuts myself. That’s where this easy donut muffin recipe comes in. I’ve been making this one for what seems like forever, ever since my mom shared it with me years ago. They hit the spot in my appetite looking for donuts, especially when you slice them in half and spread peanut butter on them.


Donut Muffins
Yield: 12 1c sugar

1/3c shortening
1 egg
1/2c milk (I use soy milk)
1 1/2c flour
1 1/2t baking powder
1/4t nutmeg
1/2t salt

Preheat oven to 350 degrees. Spray a 12-cup muffin pan or line with paper or silicone baking cups.

Cream together the sugar and shortening. Add the egg and milk. Stir in the dry ingredients.

Pour the batter into the muffin pan and bake for 25-30 minutes until lightly browned on top.

Note: I have successfully made this recipe vegan by substituting Egg Replacer for the egg.

Cheesy Quinoa

I love macaroni and cheese (my favorite recipe is here), and I’ve recently rediscovered quinoa. I was delighted to come across this recipe for Cheesy Quinoa Mac & Cheese while hanging out at Pinterest one day.

I simplified it a little bit, but I plan to follow the original recipe sometime and add sautéed vegetables. For now, this dish is a family favorite: My son asked for seconds! Great reheated for lunch, too.


Cheesy Quinoa
Adapted from Around the Table: Loving Food in RI and Beyond …
Serves: 8

1 1/2 c quinoa, rinsed and drained
1 c chopped broccoli
Salt to taste
Pepper to taste
2 large eggs
1 c soy milk or dairy milk
1 1/2 cups grated Cheddar cheese, more for sprinkling

Bread crumbs for topping Preheat oven to 350 degrees. Coat a 13x9 baking dish with cooking spray.

Cook the quinoa according to package directions, about 15 minutes. Steam the broccoli (I used frozen) until tender.

Whisk the eggs and milk together in a large bowl. Fold in the quinoa and broccoli, stirring very well. Pour into prepared pan and top with bread crumbs.

Bake 30-35 minutes until the bread crumbs are browned.

Since we are a collective of compassionate creatives (how's that for alliteration?!) I thought this week addressing the constant design conundrum "when to say when" would be fun.  In art school you spend countless hours discussing the skill of knowing when to quit, back away from the piece and allow it to be finished.  Is this ever easy? NO!

My name is Christine. I have lived in Michigan my whole life but love to travel.

Vegan or Vegetarian? How long?
I have been vegan for about 15 years now.

When did you open your shop on Etsy?
I joined Etsy in 2007 but just last month really opened up my shop.

When I am not making jewelry I am a freelance graphic designer and nanny.

I volunteer once a week at a local animal sanctuary and spending time with the animals and their unique personalities gives me inspiration.

Strawberry Crumb Bars

Our strawberry patch produced mightily this year, and I have the berries for at least three batches of jam in my freezer. We still had plenty to eat, though, which was good because my son decided this summer that he liked fresh berries again.

Some of the berries went into a batch of these delicious strawberry bars. The only deviation I made from the recipe was to add a few frozen raspberries to make a full quart of berries. It made plenty to share!


Strawberry Crumb Bars
From “Smells Like Home

1½ c sugar, divided
1 t baking powder
3 c flour
¼ t salt
Zest of 1 lemon
2 sticks (½ lb) cold unsalted butter, cut into pieces
1 large egg
4 c fresh strawberries, hulled and quartered
4 t cornstarch
Juice of 1 lemon

Preheat the oven to 375° F.  Grease a 13×9-inch pan and set aside.

In a medium bowl, combine 1 cup of the sugar, baking powder, and flour. Mix in the salt and the lemon zest, and stir together with a fork. Cut in the butter and egg with a pastry blender (or two knives) until the largest chunks are about pea-sized. Spread about half of the dough mixture in an even layer over the bottom of the prepared pan and press down firmly to form the bottom crust.

In another bowl, stir together the remaining sugar, cornstarch, and lemon juice. Gently mix in the strawberries until combined.

Spread the berry mixture evenly over the bottom crust. Crumble the remaining dough over the top of the berries. 

Bake 45 minutes or until the top is slightly golden brown. Cool completely before cutting into squares and serving.
