Peaches, Apricots and Pineapple - Oh My

The other day, some friends and I were hanging out, making smoothies, chatting. The smoothie we made was so good, I had to stop by and share the recipe with all of you! There were only three of us and we drank almost all of it, but we made enough to feed 5 to 6 people easy. Here's what you need:

3 apricots
3 cups of fresh pineapple (it tastes better if it's fresh)
A bag of frozen peaches
1 to 2 cups of water to help it mix up really well!

Mix it all together and enjoy!

Confetti Couscous Salad- Vibrant, Fresh, Super Easy

Been making this recipe from Vegetarian Times for years, and it's a favorite because of its alive, bright flavors. I'd forgotten about it for a while, until the recent heat wave and a need for some easy & nutritious whole foods made me start digging for some dishes that are low-cook, low-kitchen-time, and low cost. This is very similar in ingredients to the Easy Burrito recipe I posted last week on my blog, but with a little less cooking!

Use fresh peppers and herbs from the garden or farmer's market! I used a fresh-picked jabanero pepper, and my fingertips burned for hours, literally! We made vegan chocolate chip cookies for dessert after this- try this awesome recipe (I prefer using another type of egg replacer in place of the applesauce- a bit too cakey otherwise)!

Confetti Couscous

Ingredient List

6 servings

1/2 cup diced yellow bell pepper (optional)
1/4 cup finely chopped fresh cilantro
1 small jalapeno pepper, seeded and diced
2 Tbs. olive oil
3 to 4 Tbs. fresh lime juice (2 limes)
1/2 cup diced red bell pepper (optional)
1 tsp. salt
1/2 tsp. ground cumin
1 cup uncooked couscous
15-oz. can black beans, rinsed and drained, or 1 3/4 cups cooked black beans
1 cup cooked fresh (about 2 ears) or thawed frozen corn
1/2 cup diced red onion


NOTE: Because of my dislike of most raw veggies, I actually saute the peppers for a few minutes before adding to the salad.

In medium saucepan, combine salt, cumin and 1 1/2 cups water. Bring to a boil over high heat. Add couscous, stir and return to a boil. Reduce heat to low and simmer 2 minutes. Remove from heat and fluff with fork. Let stand 5 minutes. Fluff again.

Add beans, corn, onion, bell peppers if using, cilantro and jalapeno. Stir in oil and enough lime juice to give salad a puckery edge. Serve warm or at room temperature.

August's "Dog Days" Creative Challenge

August's Challenge

This month's theme of "Dog Days" takes us into one of the hottest, most uncomfortable month of the year for many team members. Get into the mindset of the canine persuasion or the summer's beat down, and let your imaginations go wild. The challenge theme is very subjective, so enter whatever handmade creation, vintage item, or supply, new or already listed in your shop, that you think fits the theme (get creative with it)!

Each month's challenge entries will be listed on the blog and put up for public vote, the winner receiving an ad for their shop on the team for the entire month following. :) Every 6 months, all 6 winners from the last series of challenges will be put up for a vote together, the top vote getter winning a grand prize! Yay!

*Challenge Guidelines*

~Participation is open to any EtsyVeg team member.

~Each member may enter one item. Entry involves simply posting the link to an applicable item in your Etsy shop in August's monthly challenge forum thread and tagging that item with the tag "veggiehotdog" (all one word, without the quotations). You must also have your entry tagged with the official team tag, "etsyveg team" (both words must be used).

~If an item entered in the challenge sells before the end of the month, please send a convo to the EtsyVeg Etsy shop, including the link to the sold item, so that it can still be included.

~Deadline for entry is Wednesday, August 31st.

~All entries will be featured in a treasury on the EtsyVeg blog next month, to be voted on by the public (EtsyVeg members can vote, too). The top vote-getter will be awarded with an ad for their Etsy shop on the top of the blog sidebar for the entire month until the next winner is chosen. At the end of six months, all winners from the past six months will be up for vote on the blog again, this time eligible to win a grand prize gift!

~All EtsyVeg members (not just participants) are encouraged throughout the month to initiate forum threads about the challenge, make treasuries by doing a tag search for "etsyveg team" with "veggiehotdog" and putting only those items in the treasury, or to generate other types of promotion.
