Scalloped Potatoes Vegan Style

Hi Everybody, Gilding Lilies here, with another recipe. I think this is the perfect comfort food for a cold winter day. Enjoy!


Scalloped Potatoes

3 average sized potatoes, thinly sliced
3/4 cup veggie broth
1/2 cup soy milk
1-2 Tbsp olive oil
2 cloves garlic, minced
4 Tbsp nutritional yeast
1/2 tsp thyme
1/2 tsp basil
1/4 tsp rosemary, broken into tiny pieces
1/4 tsp paprika
1/4 cup vegan cheese, shredded
salt and pepper to taste

Preheat the oven to 400 degrees. Grease a 9 X 13 glass pan. Arrange the slices of potatoes, in layers, in the pan. Pour the broth and the soy milk over the potatoes. Drizzle on the olive oil. Sprinkle on the garlic, nutritional yeast, and the vegan cheese. Sprinkle on the seasonings. Loosely cover with foil and bake for 35 minutes. Uncover and bake for another 15 minutes.

What veggie cheese do you use? There used to be a great vegan cheese that I bought in Portland, OR but I can't find it on the East coast. I think it was made with hemp seeds...

LOVE Scalloped potatoes, can't wait to try it vegan! I'm also interested in some suggestions for a good vegan cheese.
