The Hungry Vegetarian

Vegetable Lasagna

This is an old stand-by at my house.

Ingredients:
1/2 box no-bake lasagna noodles
1 jar marinara sauce
1 yellow squash or zucchini, sliced as thin as possible
1 or two large carrots, sliced as thin as possible
Fresh spinach
1 egg yolk
1 medium-sized container ricotta cheese
Powdered romano or parmesan

Directions:
Preheat the oven to 375.° Mix together the ricotta, egg yolk, and about ½ cup powdered cheese.

Spread a layer of tomato sauce at the bottom of a glass oven-safe dish. Cover the tomato layer with noodles, then spread cheese mixture onto that. Stick a layer of vegetables (no overlapping) into the cheese, then pour sauce on top and smooth it with the back of a spoon.

Keep layering in this order (marinara, noodles, cheese, vegetables…) until you’re out of stuff. End with a layer of cheese or sauce, and sprinkle extra powdered cheese on top. Bake for 45 minutes.
