Cheesy Broccoli Potato Soup
What do you put on your baked potatoes? Broccoli and cheese? Sour cream and chives? My mom used to eat 'em with ketchup.
1 pound bag chopped broccoli
1 small onion, chopped
1 quart vegetable broth
1 5-oz can evaporated milk
2 servings (1 ½ cups) instant mashed potatoes
2 cups shredded cheddar
Salt and pepper to taste
In a big pot, saute onions until transparent and soft. Add broccoli and the vegetable broth, reserving 2/3 cup. Bring to a boil and simmer about 10 minutes. Prepare the mashed potatoes using the reserved broth.
Add milk, potatoes, and cheese to soup. Cook until bubbly and thickened. Season with salt and pepper to taste.
