The Hungry Vegetarian

Gazpacho (vegan)

Gazpacho, a soup that's served cold, tastes just like a salad. And you don't even have to chew!

4 big beefsteak tomatoes
1 large cucumber
1 purple onion or 2 shallots
1 crusty roll
Fresh cilantro to taste
2 tbsp olive oil
6 tbsp vinegar
Salt to taste

Lightly chop the tomatoes, cucumber, onion, and roll. Add the rest of the ingredients and puree in a food processor or blender. Refrigerate overnight to soak the bread and deepen the color.

Sounds yummy. I've never seen it with bread before.
