The Hungry Vegetarian

Really Good Red Lentils (vegan)

One package of dried lentils yields a whole crapload of cooked lentils. Don't make the full-size recipe unless you're going to a potluck or feeding an army.

Ingredients:
1 package red lentils
3 carrots
½ onion 1 or 2 stalks celery – chopped
1 can stewed tomatoes
3 cups vegetable broth
Cinnamon, ginger, cayenne pepper to taste

Directions:
Chop all the veggies. In a big pot, combine all ingredients except spices. Bring to a low boil and cook until lentils are soft. Add more liquid as needed. Remove from heat and add spices.

Nice recipe - I haven't tried cinnamon with lentils. I guess this would freeze well if you made a lot?
