The Hungry Vegetarian

Gazpacho (vegan)

Gazpacho, a soup that's served cold, tastes just like a salad. And you don't even have to chew!

4 big beefsteak tomatoes
1 large cucumber
1 purple onion or 2 shallots
1 crusty roll
Fresh cilantro to taste
2 tbsp olive oil
6 tbsp vinegar
Salt to taste

Lightly chop the tomatoes, cucumber, onion, and roll. Add the rest of the ingredients and puree in a food processor or blender. Refrigerate overnight to soak the bread and deepen the color.

Meet Sarah ("Saar") of Etsy's AmiVegan

What kind of items do you sell in your shop?

Crochet cuteness, 50s dresses, vegan stuff... much more to come. Keep an eye on me!

How did you get started?

I got the crochet bug and started making all sorts of stuff. I decided to start selling when, all of a sudden, I saw my tiny house filling up with crochet cuteness and friends that hadn't gotten anything yet becoming scarce. I have a friend who has a handmade storefront in Gent, Belgium (, where I live. She told me about Etsy, and there you go!

Tell us why you choose to use cruelty free materials in your work?

It comes naturally to me. If I don't buy, eat, or drink cruelty, why would I craft it?

Do you sell your items outside of etsy (if so, where)?

Maybe sometimes at a local fair, but not that often.

Do you have any future plans for your shop?

Oh yes! I want to make paintings, too, and do a lot of customized stuff.

Do you maintain any other sites besides your shop (such flickr, MySpace, blog, etc.)?

What kinds of hobbies and interests do you have?

I volunteer for EVA, the Belgian vegetarian society; I bring out the eco word to stylish chicks; I cook and give cooking classes; and I write (I'm a journalist).

What inspires you?

Nature. I like doing stuff with flowers and animals.

Is there anything else you would like to add?

I love you. I do. Really. *kiss*

One of our own, Etsy seller and EtsyVeg member KrugsEcoLogic, is in serious jeopardy of losing her established Etsy shop and hard-worked-for status due to unfounded, vicious verbal attacks and abuse by way of feedback and Storque comments. KrugsEcoLogic is a wonderful, caring, and conscientious seller with nothing but glowing reviews until this awful situation arose, and she deserves to be protected from such treatment. She has been at the mercy of a vindictive buyer who has been on a mission to ruin her name through maniacal and mean rantings, and Etsy admin. has refused to step in. They will not remove the awful feedback , and have not taken any action to stop the abuse of one of its own. Please take action NOW and sign this petition, which will be sent to Etsy to let them know that the Etsy community, both buyers and sellers, will not stand for the abuse and harassment they are condoning. Thank you!

Member 'Pet of the Week' with FireHorseTextiles

Julia writes:
We got Henry as an eight-week-old rescue pup. His mother, Tess, had been found as a mange-ridden, starving stray a week before she gave birth to a litter of seven puppies. She also had no home, and as we fell in love with her, we took her as well, and had 10 wonderful years with her (she passed away in March 2006).

Henry is 13 years and 8 months old. He loves his walks, chasing games and visiting new places. He is the chief ‘time keeper’ in our house, and since my husband, Rob, and I work from home, he spends his day organizing our lives and that of our chickens, Cleo and Mabel!

Henry is very lovable, gentle, and cuddly, and has never lost his soft puppy fur. He looks like a miniature Labrador, but is actually a Staffordshire-Bull Terrier cross.

Henry recently appeared in the LOLpets section of The Times newspaper (UK) after I sent in a picture of our recent holiday, showing him in his pet stroller on the beach. His ears were blowing about a bit and it is quite a funny picture. He really enjoyed his holiday, although you might not thinks so from the look on his face.

His arthritis had been acting up at the time, hence the stroller. Since the vet switched him to a new arthritis medicine, though, he is much better, with a new lease on life. Henry is now able to enjoy long walks again, without his stroller, and has been running round like a puppy instead of a 13 1/2 year-old dog.
