The Hungry Vegetarian

Sesame Noodles (vegan)

The shredded carrot and snow peas add a dramatic splash of color to this dish.

½ box spaghetti
1 cup carrot, shredded
1 cup snow peas, shredded
1 tbsp sesame oil
2 tbsp bottled peanut sauce
2 tbsp soy sauce
1/2 cup water
Sesame seeds (optional)

Cook pasta until al dente, strain and set aside. Meanwhile, chop the veggies so they're very thin strips, as thin as the pasta if you can do it.

Heat oil in saucepan and add pasta and shredded veggies. Add peanut sauce, soy sauce, sesame seeds, and water, and stir to coat. Heat until veggies are cooked through, 2 minutes or longer – depending how thin you cut them.

Serve with sesame seeds sprinkled on top. Bonus points if you use black sesame seeds.
