Easy Egg-Drop Soup

I make this recipe whenever a recipe calls for egg yolks but not their whites. It's easy to scale up if you've got a bunch of egg whites.

Ingredients:
2 cups veggie broth
1 egg white

Directions:
Bring the broth to a boil. Slowly drip in the egg white while stirring with a fork.

If desired, add thinly sliced carrot strips and fresh spinach. They will cook while the soup boils.

For an authentically thick broth, mix a little corn starch with water and pour that into the broth as it boils. It will thicken up as it boils.
