The Hungry Vegetarian

Corn and Bean Salad (vegan)

I've heard this colorful dish referred to as "Mississippi Caviar."

1 small can black beans, drained
1 can corn
½ cup diced onions
2 plum tomatoes, seeded and cubed
Fresh cilantro, chopped
2 tbsp vinegar
1 tbsp vegetable oil

Drain the corn and black beans. Combine and mix all the ingredients.

Serve as a dip with tortilla chips, or in a wrap sandwich, with greens and salad dressing.
