The Hungry Vegetarian

Saucy Asparagus and Tomatoes (vegan)

I loved roasting vegetables in the oven (or toaster oven!) on high heat. They get a fantastic flavor you just can't achieve on the stove.

Ingredients:
3 bundles of asparagus (3 dozen stems)
1 can stewed diced tomatoes
Sauce:
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp soy sauce
Dash sesame oil

Directions:
Wash the asparagus and cut the stemmy tips off. Drain the liquid from the tomatoes. Combine all the ingredients together and bake at 450* for 15-20 minutes, mixing once.

The sauce absorbs, gets thicker and more flavorful. Yum.
