The Hungry Vegetarian

Potato Celery Soup

Cayenne pepper and curry powder add depth to this recipe. An easy substitution makes it vegan.

Ingredients:
2 large potatoes, cubed
1 bunch celery, chopped
1 onion, chopped
3 cups broth
2 tbsp butter
1 tsp. curry powder
1 tsp. cayenne pepper

Directions:
Saute the onions, celery, and potatoes in a little oil until they begin to brown, then add the broth and seasonings. Simmer on low-medium heat for 30 minutes.

Select and set aside a few nicely shaped pieces of potato, celery, and onion. Puree the rest of the mixture in a food processor or blender until it's creamy, then add those veggie chunks back in.
