The Hungry Vegetarian

Ratatouille (vegan)

Invented by the French and popularized by the Disney movie, this simple concoction packs a powerful punch.

1 large eggplant (or a small eggplant and a zucchini)
1 small red or yellow bell pepper
1 small onion
1 can diced stewed tomatoes
1 can vegetable broth
Spices to taste: oregano, bay leaf, salt, pepper

Cut the eggplant, pepper, and onion into chunks. Stick in a pot along with tomatoes (and liquid from tomato can) and cover with vegetable broth. Bring to a boil, then simmer on low heat for about an hour, or until everything is soft.

Serve with rice or crusty bread.
