The Hungry Vegetarian

Pineapple Casserole

I make this dish whenever I have to get rid of some aging bread. It'll work equally well with sliced bread, sandwich buns, or rolls. It is SO good.

1/2 cup butter
1/2 cup sugar
4 eggs
5 slices bread, torn into chunks
1 20-oz can crushed pineapple

Preheat the oven to 350.

Cream together butter and sugar. Beat in eggs one at a time. Stir in bread and crushed pineapple. Transfer to a greased baking dish.

Bake 60 minutes, or until bubbly and lightly browned.
