Broccoli Gorgonzola Casserole
Once, I was halfway through this recipe when I realized I didn't have any flour. I substituted pancake mix and it came out all cakey. Give it a try.
3 bunches broccoli
1 tbsp butter
¼ cup flour
1 cup milk or soymilk
4 oz. cream cheese
½ cup crumbled gorgonzola or other blue cheese
2 cups crusty bread, cubed
Cut broccoli into florets and steam until just tender. Set aside.
Over medium heat, melt butter and stir in flour. Cook until bubbly, about one minute. Add milk and stir over medium-high heat until mixture is thickened and boiling.
Add cream cheese and gorgonzola; whisk until smoothly blended. Stir in broccoli. Pour mixture into a casserole dish.
In a blender or food processor, whirl bread cubes into coarse crumbs. Sprinkle evenly over casserole and spray on cooking oil to wet the crumbs.
Bake at 350 for 50 minutes, or until crumbs become golden. (Put foil under the casserole because the sauce tends to drip.)
