The Hungry Vegetarian

Jamaican Rice and Peas (vegan)

In Jamaica, they call this rice and beans dish "rice and peas." With its aroma of coconut and island spices, it'll totally transport you.

Ingredients:
2 cups uncooked rice
1 can kidney beans, undrained
1 can coconut milk
1 cup vegetable broth or water
½ onion, chopped
2 cloves garlic, minced
Spices: salt, cayenne pepper, garlic, allspice, thyme (to taste)

Directions:
Saute the onions and garlic in a little oil. Combine them with all the other ingredients in a pot or rice cooker. Boil until the liquid is absorbed and the rice is soft, about 30 minutes.

I lived in Barbados for several years, and it's really interesting to see how the same recipe (Rice & Peas) is done differently on each Island.

In Barbados, there is no coconut milk, and the peas used are always 'black eyed peas' :-)

I make it all the time :)
